The guajillo chili (from Nahuatl, huaxin "huaje") is a variety of dry chili very popular in Mexican cuisine. It is obtained from the drying of the mirasol chili pepper. Reddish-brown in color, quite dark, and a thin, smooth and shiny skin. It is generally defined as sweet and somewhat fruity. Pungency varies widely between 2 and 15 thousand SHU, that is, slightly spicy to moderate spicy. It is mainly used for grinding in sauces, marinades, moles and stews.
