POX (pronunciation "posh"), is an ancestral Mayan drink from Chiapas made from four types of creole corn: red, black, yellow and white, sugar cane and wheat. These ingredients are fermented in wooden barrels and distilled doubly in copper stills. This drink is produced in the community of San Juan Chamula, Chiapas. In this region, it is common to chew a coffee bean before taking a sip of POX.

POX Siglo Cero is committed to showing the spirit of POX to the world in all its richness, in its cultural, ceremonial and daily importance. They are determined to rescue and preserve the original POX recipe, which has been used for centuries by the Tzotzil/ Mayan community.
